Cook Christmas lamingtons
Ingredients:

  • 1 slab of sponge cake
  • 500g icing sugar
  • 3 tablespoons of cocoa
  • hot water
  • 1/2 tablespoon butter
  • 3 drops vanilla essence
  • 3 cups dessicated coconut - use food colouring to make 1.5 cups red, and the remainder green in colour for Christmas.

Method:
Slice your slab of sponge cake into rectangles approximately 6cm by 4cm.

Mix the icing sugar and cocoa together and then add the butter to it. Slowly add hot water - a teaspoon at a time until you have a nice chocolately type mixture. It shouldn't be too thick or else you won't have enough of it to cover all the lamingtons :) Add three drops of vanilla essence and stir until the mixture is smooth.

Dip the sponge cake pieces into the chocolate mixture, and then immediately roll them in the coloured coconut. Leave on a plate to set. Try not to lick your fingers too often as you go! :))
